She added asafetida powder (also called “hing). I have used it before; however, it is a very, very strong-smelling powder. It is good, but I strongly recommend that you add just a pinch, as trust me, it’s strong.

I is called “asafotida” - known as “hing” in Indian stores — its a sharply aromatic resin.

Namaste Aunty. I made this yesterday and I believe i followed your instructions correct.
However my spinach was very soft when it finished cooking and fell apart. Can you tell me what I have done wrong?

I couldnt find “hing” so i used garlic insted, mixed it in the tomato puré.
Made this today and it turned out really nice! Had some whole grain basmati rice to it. Hope to find hing til next time ill cook this.

You can find Hing in any good indian/south indian grocery or cash and carry.
